Ingredients
  • 2tbsp olive oil
  • 1small yellow oniondiced
  • 1 bell pepperchopped, any color, can use 2 small peppers
  • 2 jalapenosfinely diced
  • 2cloves garlicfinely chopped
  • 1pound ground turkeywhite or dark meat
  • 114.5 oz can diced tomatoeswith their liquid
  • 115 oz can pumpkin puree
  • 1cup water
  • 1tbsp chili powder
  • 1tsp ground cumin
  • 1/2tsp saltmore to taste if needed
  • 1/2tsp ground black pepper
  • 115 oz can kidney beansdrained and rinsed
Instructions
  1. Heat oil in a large pot over medium-high heat.
  2. Add onion, bell pepper, jalapenos, and garlic. Cook, stirring frequently until tender, about 5 minutes.
  3. Add turkey and cook until browned.
  4. Add tomatoes, pumpkin, chili powder, cumin, water and salt and pepper to the turkey mixture.
  5. Bring mixture to a boil, then reduce heat to medium low; add beans.
  6. Cover and simmer, stirring occasionally, for 30-45 minutes.

**Cardinal Rule** Want to make this for a picky eater? Just don’t tell them there is pumpkin in it. (Trust me, it works)
