Ingredients
  • 1/2cup oatmeal
  • 1 egglightly beaten
  • 1/2tsp pure vanilla extract
  • 1/2tsp ground cinnamon
  • 1tbsp maple syrup
  • 1tbsp peanut butteroptional
Instructions
  1. Combine the beaten egg, oatmeal, vanilla and cinnamon in a bowl.
  2. Heat a small pan over medium heat.
  3. Pour egg and oatmeal mixture into pan, forming it into a pancake shape.
  4. Cook for 2-3, flip and cook for 2 minutes on the remaining side.
  5. Serve with syrup, peanut butter, fruit, etc.
Recipe Notes

**Cardinal Rule** Either old fashioned oats or quick cooking can be used to make this.  Quick cooking oats are pictured above; old fashioned oats will yield a chewier oatmeal pancake.
