Chicken with creamy herb sauce

Ingredients
  • 4 chicken breasts
  • 2tbsp olive oil
  • Salt and black pepper
  • 1large shallotminced
  • 5oz spreadable herb cheesesuch as Boursin or Laughing Cow
  • 1/2cup chicken broth
  • 1tbsp fresh lemon juice
  • 2tbsp fresh tarragonchopped
Instructions
  1. Preheat oven to 350F.
  2. Heat olive oil over medium high heat in an oven proof dish (such as a dutch oven).
  3. Season chicken breasts on both sides with salt and pepper. Once oil is hot, brown chicken breasts on both sides (2-3 minutes per side).
  4. Bake chicken for 35 minutes. Once chicken is cooked through, remove to a plate to rest while the sauce is made.
  5. Place the pan that the chicken was cooked in on the stove top over medium heat.
  6. Add more oil, if needed, and saute the shallots until they are slightly softened, about 2-3 minutes.
  7. Add the herb cheese, chicken broth and lemon juice. Stir until the cheese is melted and the sauce is creamy.
  8. Spoon sauce over the cooked chicken, garnish with the fresh herbs.
Recipe Notes

**Cardinal Rule** If you are not a fan of tarragon, you can substitute fresh chopped parsley or chives.
