Ingredients
  • 3-4 medium tomatoesdiced
  • 116oz can quartered artichoke heartsdrained well
  • 2cloves garlicminced
  • 2tbsp olive oil
  • 2tbsp flour
  • 1tsp sugar
  • salt and pepperto taste
  • 4 chicken breasts
  • 1/2cup mayonnaise
  • 1/4cup Parmesan cheese
  • 1tsp garlic powder
  • 1tsp smoked paprika
  • 4tsp bread crumbsItalian seasoned
Instructions
  1. Heat oven to 375F.
  2. Place the diced tomatoes, artichoke hearts and minced garlic in a bowl.
  3. Add the olive oil, flour, sugar and salt and pepper, stir until combined.
  4. Place the artichoke/tomato mixture in a baking dish with the chicken.
  5. Then, combine the mayonnaise, Parmesan cheese, garlic powder and paprika together in a small bowl.
  6. Spread mixture on top of the chicken breasts, and sprinkle with bread crumbs (1 tsp per chicken breast).
  7. Bake in 375F oven for 30 minutes.
  8. Serve over spaghetti squash, pasta, or on its own.
Recipe Notes

**Cardinal Rule** This dish is best made in a shallow 9×13 baking dish so the vegetables are in a thin layer and can caramelize while baking.
