Ingredients
Blue Velvet Cake
  • 2cups all purpose flour
  • 1tsp baking soda
  • 1tsp baking powder
  • 1tsp salt
  • 2tbsp cocoa powder
  • 2cups sugar
  • 1cup vegetable oil
  • 2 eggs
  • 1cup buttermilk
  • 1-2oz liquid food coloringcan be red or blue
  • 1tsp white distilled vinegar
  • 1/2cup hot black coffee
Cream Cheese Frosting
  • 28 oz pkg cream cheesesoftened
  • 1/2cup buttersoftened
  • 1/4cup milk
  • 2tsp pure vanilla extract
  • 4cups powdered sugar
Instructions
Blue Velvet Cake
  1. Preheat oven to 325F.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt and cocoa powder. Set aside.
  3. In a large bowl combine the sugar and vegetable oil, stir until combined.
  4. To the sugar and oil, add the eggs, buttermilk, vanilla and food coloring. Carefully stir to mix together.
  5. Combine the coffee and vinegar, then add to the rest of the wet ingredients.
  6. Gradually add the dry ingredients a little at a time to the wet ingredient, mixing after each addition. Stir just until it is all combined.
  7. Generously grease and flour two 9 inch round cake pans. Optionally, you can line the bottom of each pan with a circle of parchment paper (grease top of paper in pan).
  8. Pour the batter evenly into each pan, and bake for 30-40 minutes, until a cake tester inserted into the center of the cake comes out clean.
  9. Let pans cool on a rack for 10-15 minutes. Run a knife or offset spatula around the edge of the cake to loosen it from the pan.
  10. Remove the cakes from the pan and leave on rack until completely cooled. Frost cakes once cooled.
Cream Cheese Frosting
  1. In the bowl of an electric mixer, beat cream cheese and butter until smooth.
  2. Pour in milk and vanilla extract, and mix until well combined.
  3. Add half the powdered sugar and mix until all incorporated.
  4. Add the remaining powdered sugar and continue beating until smooth and fluffy.
Recipe Notes

**Cardinal Rule** If the frosting is too thick, add more milk, one teaspoon at a time, until it is the desired consistency.  Alternatively, if it is too thin, add more powdered sugar until it is thick enough to frost the cake.
