Ingredients
  • 1 small oniondiced
  • 4 garlic clovesminced
  • 2tsp olive oil
  • 1/2tsp ground cumin
  • 1/2tsp ground coriander
  • 1tsp turmeric
  • 1/4tsp ground cardamom
  • 1/2tsp cayenne pepperadd less/more to suit your tastes
  • 1/2cup red lentilsrinsed in cooled water and drained
  • 1 1/2cup vegetable stock
  • 1/2tsp salt
  • 2tbsp fresh parsleyminced (or 2 tsp dried parsley)
  • 1/2cup packed spinachchopped
  • 1tbsp fresh lemon juice
  • 1tbsp chia seeds
  • 1tbsp flax seed meal
  • 1tbsp sesame seedstoasted
  • 1/4cup plain breadcrumbs
Instructions
  1. Heat oil in a sauce pan with cover over medium heat. Add onion and garlic and cook until soft and translucent, 5-7 minutes.
  2. Add cumin, coriander, turmeric, cardamom, and cayenne pepper to the onion mixture. Stir to combine, and cook for 1 minute.
  3. Add the rinsed and drained lentils and vegetable stock. Bring to a boil, then turn down to low and simmer partially covered for 10 minutes.
  4. After 10 minutes, stir in the parsley and spinach and cook for 5 minutes, or until lentils are tender and the liquid is absorbed.
  5. Add lemon juice and salt.
  6. Stir in chia seeds, flax seed meal, and toasted sesame seeds.
  7. Chill mixture in the refrigerator for 30 minutes to help firm up the lentils.
  8. Preheat oven to 425F.
  9. After chilling for 30 minutes, remove lentil mixture from the refrigerator and stir in the bread crumbs.
  10. Scoop fritter mixture onto a parchment lined cookie sheet, using a cookie scoop if you have one. If you do not have a cookie scoop, use 1.5-2 tablespoons of the lentil mixture for each fritter.
  11. Sprinkle on additional sesame seeds, if desired.
  12. Bake at 425F for 20 minute, or until just starting to brown.
  13. Enjoy either hot right away, or cooled down on a salad.
Recipe Notes

**Cardinal Rule** If lentil mixture is too salty, add an additional 2-3 teaspoons of lemon juice; the acid will help balance out the salt.
