Ingredients
Fennel Tomato Sauce
  • 1bulb fennelcored and diced
  • 3 small tomatoesdiced
  • 1 small oniondiced
  • ttbsp sugar
  • 1tbsp olive oil
  • 1tsp salt
  • 1/2tsp black pepper
Sausage and Fennel Breakfast Sandwich
  • 1 pretzel bunbuttered and toasted
  • 1/4pound bulk breakfast sausageformed into round patty
  • 1 eggover-easy
  • 1/4cup fennel tomato saucesee recipe below
  • 1/4cup Swiss cheesegrated
Instructions
Fennel Tomato Sauce
  1. Combine all the ingredients for the sauce (diced fennel through black pepper), and set over medium-high heat.
  2. Cook all ingredients together for 20-30 minutes, or until the tomatoes have broken down and the sauce is thick. The fennel should be cooked through, but not mushy.
Sausage and Fennel Breakfast Sandwich
  1. To compose the sandwich, butter and lightly toast the bun over medium heat, making sure to not burn it.
  2. Layer the cooked sausage patty on the bottom half of the bun, then the over-easy egg, fennel sauce, and cheese.
  3. Broil the sandwich (without the top bun on), for 3-5 minutes, until the cheese is melted.
  4. Bacon or ham can be substituted for the sausage, depending on your preference.
Recipe Notes

**Cardinal Rule**  To add depth to the sauce, you can caramelize the onion and fennel first, before adding the tomatoes.
