Ingredients
  • 1cup sugar
  • 1/2cup shorteningI use softened butter
  • 2 eggs
  • 1tsp baking powder
  • 1/2tsp salt
  • 3tbsp orange juice
  • 1 tsp baking sodamixed with 1 tbsp hot water
  • 3-4 bananasmashed
  • 2cups flour
  • 1/2cup chopped nutsoptional
Instructions
  1. Heat oven to 325F, and grease 2 small loaf pans (can use 1 large pan, if desired)
  2. Beat sugar, shortening, eggs, baking powder and salt together for 2 minutes. Mixture will be light and fluffy once done beating.
  3. Add orange juice, bananas and baking soda with water and beat until combined.
  4. Stir in by hand the flour and nuts (if using).
  5. Bake in greased loaf pans for 50-60 minutes, a toothpick inserted into the top of the loaf will come out clean once done.
  6. Let cool in pan for 10 minutes, then turn out onto a wire rack to finish cooling.
Recipe Notes

**Cardinal Rule** If you prefer larger pieces of banana in the bread, mix in the mashed bananas by hand.  Using an electric mixer will result in smaller banana pieces (or none at all).
