Ingredients
  • 1.5pounds chickenbreasts or thighs, your preference
  • 1/2cup Dijon mustard
  • 1/4cup pure maple syrup
  • 1tbsp rice vinegar
  • salt and pepper
Instructions
  1. Preheat oven to 450F
  2. Mix together the Dijon mustard, maple syrup, and rice vinegar.
  3. Spray an 8×8 baking dish with non-stick cooking spray (or line dish with foil). Place chicken in baking dish and season with salt and pepper.
  4. Pour the mustard/syrup mixture over the chicken, turning the chicken to coat completely.
  5. Bake the chicken for 30-40 minutes, until the internal temp reaches 165F.
  6. When chicken is just cooked through, turn broiler to high and broil for 3-5 minutes longer to brown the chicken.
  7. Let rest for 5-10 minutes after cooking, then serve with sauce that is remaining in the pan.
Recipe Notes

**Cardinal Rule** When broiling the chicken (or anything, for that matter) keep a close eye on it! Food can go from nicely browned to charred black in a matter of seconds when broiling.
